Fricasseed Duck Breast
4 breasts of duck, 4 tablespoons bacon drippings or shortening, 4 tablespoons flour, 1 cup chopped onions, 3 cups water, 1 can mushroom sauce, 1 teaspoon garlic puree, salt, pepper, seasoned salt
Salt and pepper breast of ducks; flour and brown. Remove ducks. Make a roux by browning the flour in the bacon drippings. Add and saute onions. Add water, mushroom sauce, garlic, seasoned salt, salt and pepper to taste. Cover. Simmer for 2 hours. Optional: 1/2 cup sherry may be added. Serves 4.
