Crawfish Etouffee

If you don't like crawfish in your etouffee, you can substitute shrimp. 3 pounds boiled cleaned crawfish tails, 1/4 pound butter, 2 cups chopped onions, 1 cup chopped celery, 1/2 cup chopped green bell pepper, 1/2 cup chopped red bell pepper, 2 tablespoons diced garlic, 1/2 cup tomato sauce, 1 cup sliced green onions, 1/2 cup chopped parsley, Salt and pepper to taste, 3 cans cream of mushroom, 3 cans cream of celery, 1 stick of butter, approx 15 oz chicken broth,

Put everything in a pot except crawfish, chicken broth, mushroom soup and cream of celery soup. Cook down until onions are brown and wilted. Add in the rest of the ingredients. Bring to a low boil, reduce to simmer and cook 30 minutes, stirring occasionally. Add salt and pepper and/or Tony's to taste. Add a touch of cayenne pepper if desired.
