Information about the crawfish industry
About 60 percent of the crawfish that make it to consumers’ tables are pond-raised and associated with rice production. The majority of the remaining one comes from the Atchafalaya Basin. It’s the nation's largest swamp wilderness 595,000 acres. The U.S. produces 60,000 metric tons annually, with 90% of that coming from Louisiana. According to the LSU AgCenter's 2002 summary, the total value of this industry is $100 million.
Breaux Bridge, Louisiana is known as the "Crawfish Capital of the World. The 2006 Breaux Bridge Crawfish Festival will be held May 5, 6, and 7 at Parc Hardy in Breaux Bridge, Louisiana, and are sponsored by the Breaux Bridge Crawfish Association.
