Cajun Squirrel
1 or 2 Squirrels (cleaned and cut up), onion, 1 pat of butter, 1 box of Oriental Style enriched Rice & Vermicelli
Sauté onion in butter; add squirrel. Cook until squirrel is tender [add water as needed]
Add rice, stir well; add 2 cups hot water and season packet from box. Bring to a boil.
Reduce heat cover and cook for approximately 15 minutes.[Best if cooked in black cast iron skillet]
