Baked Cauliflower

1 head of cauliflower, 2 tablespoons butter, 2 tablespoons flour, 1 cup milk, ½ teaspoon salt, ¼ teaspoon pepper, 2 tablespoons chopped pimento, ½ cup green onions (chopped), 1 cup buttered bread crumbs, 1 tablespoon grated cheese

Cook whole cauliflower in boiling salt water for about 20 minutes. Drain and place in baking dish. Melt butter in small skillet. Add flour and stir until blended. Gradually add milk, stirring until smooth and thick. Add salt, pepper, pimento and green onions. Blend. Pour over cauliflower. Sprinkle with breadcrumbs and grated cheese. Bake in 375° oven for 20 minutes or until slightly browned. Serves 4 to 6.
